Um, isnt high heat like 500 degrees a bit extreme for a rib roast? Ive always heard slow and low is the way to go for tender meat. Maybe theres more than one way to cook it perfectly!

Slow and low may work for some, but high heat can give a nice crust and juicy interior. Variety is the spice of life, right? Try it before you knock it.
